This is the casserole that has been keeping American families fed since the first slow cookers hit kitchen counters, and it has survived every food trend since for one reason: it works. Layers of sliced potato, seasoned ground beef and onion, all tucked into a creamy cheddar sauce, cook down into something greater than the sum of its very ordinary parts.
It asks for twenty minutes in the morning — most of it slicing potatoes and browning beef — and then nothing at all until dinner. Come home and the potatoes are tender, the sauce has thickened itself, and the whole house smells like someone has been cooking for you all day. Technically, someone has: you, this morning.
Slice the potatoes thin — and evenly
Potato thickness decides whether this casserole finishes on time. Slices around 1/8 inch (3 mm) cook through in the six-hour window; chunky slices can still be firm when the beef is ready. A mandoline makes fast, even work of it, but a sharp knife and a little patience do the same job. Russets are our first choice — their starch thickens the sauce as they cook.
Why we brown the beef first
Plenty of versions of this recipe start with raw beef to save time, and we tested that shortcut. The result is greyer, fattier and blander. Ten minutes of browning builds real flavor, lets you drain the fat, and means the finished dish tastes cooked rather than steamed. It is the one step we never skip.
Ingredients
- 1 1/2 lb ground beef, 85% lean (680 g)
- 1 medium yellow onion, diced (about 150 g)
- 2 garlic cloves, minced (about 6 g)
- 2 1/2 lb russet potatoes, peeled and sliced 1/8 inch thick (1.1 kg)
- 1 can cream of mushroom soup, 10.5 oz (298 g)
- 3/4 cup milk (180 ml)
- 1 teaspoon kosher salt (6 g)
- 1/2 teaspoon black pepper (1.5 g)
- 1 teaspoon paprika (3 g)
- 1/2 teaspoon dried thyme (1 g)
- 2 cups shredded sharp cheddar (225 g), divided
- Chopped fresh parsley, to serve

Step-by-step instructions
- Brown the beef. Cook the ground beef and onion in a large skillet over medium-high heat for 7 to 9 minutes, breaking the meat into crumbles, until the beef is browned and the onion soft. Stir in the garlic for the last minute. Drain off the fat and season with half the salt, pepper, paprika and thyme.
- Mix the sauce. In a bowl, whisk the cream of mushroom soup with the milk and the remaining seasonings until smooth.
- Layer the casserole. Lightly grease a 6-quart slow cooker. Layer a third of the potato slices in the bottom, slightly overlapping, then a third of the beef mixture, a third of the sauce and a third of one cup of the cheddar. Repeat the layers twice more, finishing with sauce.
- Cook low and slow. Cover and cook on LOW for 6 to 7 hours (or HIGH for 3 to 4 hours), until the potatoes are completely tender when pierced with a knife in the center.
- Finish with cheese. Sprinkle the remaining cup of cheddar over the top, cover, and cook for 15 minutes more, until melted and bubbly.
- Rest and serve. Let the casserole stand, uncovered, for 10 minutes so the sauce thickens to a scoopable consistency. Shower with parsley and serve.

Storage & reheating
Leftovers keep up to 4 days in the fridge and reheat well in the microwave or a low oven with a splash of milk to loosen the sauce. The assembled, uncooked casserole should not sit in the slow cooker insert in the fridge overnight — sliced potatoes can discolor; assemble in the morning instead. Cooked leftovers freeze for up to 2 months, though the potatoes soften slightly.
